Garlic Butter Chicken Thighs
Crisp-skinned thighs finished in a skillet of foaming garlic butter you spoon right back over the top.
Ingredients
- 8chicken thighs, bone-in, skin-on
- 1 tbspolive oil
- 4 tbspbutter
- 6garlic cloves, minced
- 1 tspdried thyme
- salt
- black pepper
Method
Heat the oven to 400°F. Pat the chicken very dry and season both sides well with salt and pepper.
Heat the oil in a large oven-safe skillet over medium-high heat. Lay the thighs in skin-side down and cook without moving until the skin is deep golden and releases easily.
⏱ 8 minFlip the thighs skin-side up and pour off all but about 1 tbsp of the fat.
Transfer the skillet to the oven and roast until the thickest piece reads 175°F.
⏱ 20 minMove the skillet back to the stove over medium-low heat. Add the butter, garlic and thyme around the chicken.
Once the butter foams and the garlic smells nutty (do not let it brown), tilt the pan and spoon the butter over the chicken.
⏱ 2 minRest the chicken for a few minutes, then serve with the pan butter spooned over.
⏱ 5 min
