Brown Butter Chocolate Chunk Cookies
Chewy, toffee-edged cookies made with nutty browned butter, pools of chopped dark chocolate and a pinch of flaky salt.
Ingredients
- 1 cupbutter, 2 sticks
- 1 cupbrown sugar, packed
- ½ cupsugar
- 1eggs
- 1egg yolk
- 2 tspvanilla extract
- 2¼ cupflour
- 1 tspbaking soda
- ¾ tspsalt
- 8 ozdark chocolate, roughly chopped
- flaky salt, for finishing
Method
Melt the butter in a light-colored saucepan over medium heat, swirling, until it foams, smells nutty and the bits at the bottom turn deep golden brown, 5 to 7 minutes. Pour it into a large bowl, scraping in all the browned bits.
Let the butter cool until warm, not hot.
⏱ 15 minWhisk in both sugars, then the egg, yolk and vanilla until glossy and smooth.
Stir in the flour, baking soda and salt until just combined, then fold in the chocolate.
Chill the dough so it firms up and the flavor deepens.
⏱ 30 minHeat the oven to 350°F and line two baking sheets with parchment. Scoop 3-tablespoon balls of dough, spacing them 3 inches apart.
Bake until the edges are golden and the centers still look slightly underdone.
⏱ 12 minSprinkle with flaky salt and let them cool on the sheets for 10 minutes before moving.
