Grilled Juicy Lucy Burgers
Two thin patties sealed around a core of folded American cheese, grilled until the center turns molten.
Ingredients
- 1½ lbground beef, 80/20
- 4 sliceAmerican cheese
- 1 tspWorcestershire sauce
- 4hamburger buns
- 1 tbspbutter, softened
- ½ cupdill pickle chips
- salt
- black pepper
Method
Gently mix the beef with the Worcestershire sauce and divide it into 8 equal portions. Flatten each into a thin patty about 4 1/2 inches wide.
Fold each cheese slice into quarters to make a small stack. Set one stack in the center of 4 patties.
Cover each with a second patty and pinch the edges firmly all the way around to seal in the cheese. Press a shallow dimple in the center of each top and season both sides with salt and pepper.
Heat the grill to medium-high, about 450°F, and oil the grates.
Grill the burgers with the lid closed, then flip once and grill the other side until the beef reaches 160°F.
⏱ 10 minButter the cut sides of the buns and toast them on the grill for 30 to 60 seconds.
Rest the burgers before serving; the cheese inside is molten and can burn.
⏱ 2 minServe on the toasted buns with pickles.
